Georgian Eggplant Rolls are a popular appetizer that luckily fits into a keto diet! For our Keto Georgian Eggplant Rolls, we use ingredients that are easy to find in Canada, while still the keeping traditional flavors. We have two keto versions for this recipe that will impress any guest! 

Keto Adaptation 

Traditional eggplant rolls are served with pomegranate seeds. We decided to make our Keto Georgian Eggplant Rolls with a small cherry tomato instead. This adds a nice color to the rolls and compliments the flavors of the eggplant. You may use pomegranate seeds instead, but the carb count may be higher. 

While developing this keto recipe, we thought that the walnut spread might be too high in carbs for keto. Luckily, it isn’t! However, since this was or initial thought, we came up with a keto adaptation to this recipe by using mayonnaise. In this version, we use the same fresh herbs and spices. The flavor is very similar, but without the walnuts. Turns out, the total macros for both the traditional and the mayonnaise version are very similar. We decided to still include this second version to the post because it is delicious and cheaper to make!

The Process

This is such a beautiful dish that will look like you spent hours putting it together. Luckily the process is very easy and thus makes a wonderful dish for a dinner party. For this recipe we use a food processor to speed up the process, however you can also use a mortar and pestle

(Walnut Spread)

Once the eggplant is cooked and the paste is ready, it’s time to roll the eggplants! Start by spreading a layer of the walnut paste on eggplant and place a cherry tomato in the center. Roll and repeat until the paste is completely used.

Spices

We did modify this recipe to use spices and herbs that are easy to find here in Canada. For our version we use fresh cilantro, fresh parsley, garlic and coriander. The traditional recipe uses khmeli suneli. Feel free to use that or whatever spices you prefer!

Ingredients
  

Version 1: Traditional (Adapted for Keto)

  • 2-3 Eggplants Thinly sliced, 1/4" thick. Approx. 550g sliced with tops removed.
  • 1/2 Cup Hot Water
  • 35 Cherry Tomatoes May need more or less depending on how many rolls you make.
  • 150 Grams Walnuts
  • 3-4 Garlic Cloves To Taste.
  • 1 Tsp Ground Coriander
  • 2 Tsp Apple Cider Vinegar
  • 1 Small Bunch Parsley Approx. 1-2 grams.
  • 1 Small Bunch Cilantro Approx. 1-2 grams.
  • Salt To Taste.
  • Oil For frying. Approx. 2-3 cup.

Version 2: Garlic Mayonnaise Spread (Hungryedit Version)

  • 2-3 Eggplants Thinly sliced, 1/4" thick. Approx. 550g sliced with tops removed.
  • 1/2 Cup Mayonnaise
  • 35 Cherry Tomatoes May need more or less depending on how many rolls you make.
  • 3-4 Garlic Cloves To Taste.
  • 2 Tsp Apple Cider Vinegar
  • 1 Tsp Ground Coriander
  • 1 Small Bunch Parsley Approx. 1-2 grams.
  • 1 Small Bunch Cilantro Approx. 1-2 grams.
  • Salt To Taste.
  • Oil For frying. Approx. 2-3 cup.

Instructions
 

  • Thinly slice the eggplant so that they are about a 1/4" thick. Season with salt on both sides and set aside.
  • Heat olive oil in a large pan and fry the eggplant slices until both sides are golden brown and soft.
  • Allow the eggplant slices to cool on paper towel.
  • Meanwhile prepare the walnut spread (or mayonnaise spread).
  • Option 1 Traditional Garlic Spread (Recommended): Add the walnuts, garlic, parsley, cilantro, coriander and hot water to a food processor and purée until smooth. Once puréed, add in the apple cider vinegar and purée for another minute, or until incorporated. If you don't have a food processor, you can make the paste by using a mortar and pestle.
  • Option 2 Garlic Mayonnaise Spread: Add the mayo, garlic, parsley, cilantro and coriander to a food processor and purée until smooth. Once puréed, add in the apple cider vinegar and combine.
  • Spread the paste onto the eggplant and place a cherry tomato in the center. Roll up and continue the process until all of the spread is used.
  • Optional, garnish with fresh parsley and additional cherry tomatoes.
  • Enjoy!
