How to Make Keto Cauliflower Rice

When I first started keto, I hated cauliflower rice! But now it is a staple in my low carb/keto diet. The trick is to learn how to prepare cauliflower rice correctly. For convenience I always buy frozen cauliflower rice at my local grocery. The best way to prepare the cauliflower rice is to steam it in the microwave. Allow the cauliflower to cool and squeeze out all of the excess moisture. This step is crucial! With this step you’ll get a much nicer flavour and texture for the cauliflower rice. This method is also the best way to avoid the dreaded soggy cauliflower rice.

Once the moisture is drained add the cauliflower rice to a large skillet with one can of coconut milk and a pinch of salt. Allow to simmer until the liquid has reduced and the flavours come together.

Keto Cilantro Lime Shrimp

I love making shrimp for an easy weeknight meal. Our Keto Cilantro Lime Shrimp is marinated in cilantro, lime, soy sauce, garlic and keto-friendly honey. We love using the Nature’s Hollow Honey Substitute. It’s a bit pricey, but only a small amount is needed for most of our recipes. It works great for marinades such as this and in our Keto Sweet and Sour Pork recipe!
